Lon Carter Classic, excellence and purity of technique is what Chef Lon Carter believes in. From that that foundation, he can cook off balance with a stunning result. Lon grew up in Aspen and for a decade he worked and studied with the finest Italian eateries in the area.
Deciding to advance his culinary career . The next step was to enroll in a culinary school for a degree. Lon set his sights on the prestigious Le Cordon Bleu school in Portland, Oregon. Hard work and a desire to excel landed him with many awards and at the top of his class with a 4.0 GPA
Then came a three year stint with the famous Canyon Ranch Spa in Arizona. Beautiful, perfect, healthy food was expected.
Hearing a calling to return to Aspen, Lon was awarded the Sous Chef position with Mark Fischer at Restaurant Six 89. A restaurant nationally known for its creativity and innovation. Grueling hard work and passion shaped Lons next 2 years .
Lon is now looking forward to his new position as the executive Chef at Bravo Fine Catering and instructor for the Carbondale Cooking School. This will bring all of Lons culinary skills and talents together with freedom of expression as a culinary artist, culinary leader and teacher.
